Olive Oil Poached Fingerling Potatoes

Serves 4 | Difficulty: Easy

Poaching potatoes in Olive Oil allows the potatoes to take on an incredibley buttery flavor without the addition of any butter or cream. I love fingerlings because of their natural sweetness.

Ingredients

  • 1 lb Fingerling Potatoes
  • 6 cloves Peeled Garlic
  • 1 branch Fresh Rosemary
  • 3 qts Extra Virgin Olive Oil
  • Sea Salt
  • Fresh Ground Black Pepper

Preparation Instructions

1. Wash the fingerling potatoes and allow to dry
2. Once dry, place in a pot with the olive oil, garlic and rosemary
3. Cook slowly at 200° F until fork tender (about 45 minutes)
4. Once tender, remove from oil, season with salt and pepper and roast in a hot sauté pan until golden brown
